The Schokker is a beautiful, wrinkled green pea with a creamy flavor, slightly sweeter than a regular green pea. This tempeh has a good bite and is a bit more compact than the grey pea. Time to get Schokkers back on the menu with this one. Boonzaak tempeh, because Boonzaak is necessary.
The tastiest way to prepare tempeh is to slice or cube it and fry it over high heat in plenty of vegetable oil until golden brown. Marinating isn't necessary, but it is optional. Try it fried as a snack with lovage mayonnaise, steamed, or sautéed with fresh peas, green asparagus, and beurre blanc in a refreshing appetizer or main course.
