Salt Marsh Peat

Foraged <0,5% whiskey type. We collect saline peat along the northern salt marshes. In this peat we smell fresh oak and distilled foraged herbs. This makes a warming alcohol-free alternative to whiskey to enjoy neat, on the rocks, or in a mixer. Content: 500ml 
Infusion of herbs and wood (water, oak, lapsang, carob, gentian), smoked pepper tincture (glycerin, water, smoked peat, black pepper), seawater, alcohol tincture (water, alcohol, tonka, oak, vanilla, carob, kombu, dulse), acidifiers: ascorbic acid, succinic acid, preservatives: potassium sorbate, xanthan gum.
Earthy, smoky notes from smoked peat and carob. A dry and earthy mouthfeel, underpinned by salty seawater. Seaweed from that same seawater provides umami. Firmness and fullness come from oak and lapsang tea.
Field Guide replaces alcohol by using various infusion and distillation techniques with foraged herbs and spices. With the profits, we maintain the natural environment where we find these herbs, or we support regenerative farmers who grow these crops. We'll take you on a journey through the landscape with our field guide of flavor, from sweet, cloying reed beds to dry, aromatic coniferous forests.
