Preparation

Cut into small wedges for salads, couscous, bowls, rice, or stews. Use the liquid as lemon juice in salads and cocktails. No waste!

Almost all the lemons we use in the Netherlands come from far away. Japanese quince has almost the same acidity as a lemon and grows like weeds in our colder climate. It loves rain, cold, and Dutch soil, blooms bright red in spring, and feeds pollinators. A local acid that leaves behind a lush landscape!
