Balade Minérale* (<0.5% white): A salty sea breeze. Fresh and dry. A mineral-rich terroir with a subtle sparkle. Produced with organic grapes, infused with oyster shells, green gooseberry, dulse, pine needles, and oak. Note: may contain traces of shellfish.
L’etable Fumé (<0.5% orange): A funky hay barn. Dry and sparkling, with a wild terroir. Produced with organic grapes, juicy pear, and oak-aged aromas of dried quince and rosemary.
Rouge en Voiture (<0.5% red): Juicy tannins, full and dry, with an aromatic volcanic terroir. Lively red fruit, oak, and a subtle effervescence. Produced from organic grapes, rhubarb, and red currant aged in oak and kombucha. Aromas of blackberry leaf, hibiscus, and cocoa.
Souris sous la Rhubarbe (<0.5% rosé): Earthy and floral rhubarb, sparkling and dry. Made with Pecorino grape juice and oak-fermented grape must. Enhanced with lacto-fermented tomatoes and fresh rhubarb juice. With a tincture of blackcurrant leaf and aromatic chokeberry.
