Nordic Olive plum-relish

Nordic Olive Green is our green olive from the North: unripe plums, treated like a traditional olive. Finely chopped, it becomes a relish with character.

• 50 g Nordic Green Olives, pitted and finely chopped
• ¼ small red onion, finely chopped
• Small handful of parsley, chopped
• ½ tbsp dash of rapeseed oil
• Salt and pepper to taste
• 2 slices of sourdough bread, toasted
• Cheese of your choice (optional)

Preparation:

• Mix the Nordic olives, onion, and parsley with the oil. Add salt and pepper to taste.
• Serve on toasted sourdough bread, with or without cheese.
